Description

Creamy, spicy, and packed with flavor, these Spicy Bang Bang Shrimp Stuffed Avocados are a quick and impressive dish perfect for lunch, dinner, or even appetizers. Ready in under 30 minutes!


Ingredients

Scale

2 ripe avocados, halved and pitted

1 pound shrimp, peeled and deveined

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha sauce (adjust to taste)

1 tablespoon lime juice

1 teaspoon garlic powder

Salt to taste

Chopped green onions for garnish


Instructions

Heat a skillet over medium heat. Add a drizzle of oil and cook the shrimp for 2–3 minutes per side until pink and cooked through. Set aside.

In a bowl, mix the mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, and salt.

Toss the cooked shrimp in the sauce until fully coated.

Scoop a bit of flesh out of the avocado halves to make room for filling. Optional: mash the scooped avocado and add to shrimp mixture.

Fill each avocado half with the bang bang shrimp.

 

Garnish with chopped green onions and serve immediately.

Notes

To reduce heat, cut the sriracha amount in half.

Use pre-cooked shrimp to save time.

Add extra lime juice to prevent avocados from browning if making ahead.
