- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk (at room temperature)
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 cup crushed Oreo cookies
- 1 cup butter (softened)
- 4 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 1 cup crushed Oreo cookies (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine the oil, buttermilk, eggs, food coloring, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the crushed Oreos.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool for 10 minutes, then remove from pans to cool completely.
- For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar and vanilla. Mix until fluffy.
- Once the cakes are completely cool, spread frosting between the layers and over the top and sides. Garnish with crushed Oreos.
