- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, mix the melted butter and granulated sugar until well combined.
- Add the egg and vanilla extract to the butter mixture, stirring until smooth.
- Gradually add the dry ingredients to the wet ingredients until just combined. Be careful not to overmix.
- In a separate bowl, warm the peanut butter slightly in the microwave until it’s easier to swirl.
- Drop spoonfuls of brownie batter onto the prepared baking sheet, leaving space between each cookie.
- Using a spoon, add dollops of peanut butter on top of each brownie batter dollop and swirl gently with a toothpick or knife.
- Bake in the preheated oven for about 10-12 minutes, or until the edges are set and the cookies look slightly puffed.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
