- 1 can black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)

- 1 avocado diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup sour cream or Greek yogurt
- ½ cup fresh cilantro, chopped (for garnish)
- 1 lime wedges (for serving)
Instructions
- Start by cooking your rice according to package instructions.
- Season the chicken breasts with taco seasoning and heat a skillet with a little oil.
- Cook the chicken for about 6-7 minutes on each side, until fully cooked.
- Remove the chicken and let it rest, then slice it into bite-sized pieces.
- In serving bowls, layer the cooked rice as the base.
- Top with sliced chicken, black beans, corn, tomatoes, and avocado.
- Add shredded cheese and a dollop of sour cream.
- Garnish with fresh cilantro and serve with lime wedges.
