A quick and easy dish combining succulent shrimp with garlic, butter, and parmesan cheese over fluffy rice.

  • 1 pound shrimp (peeled and deveined)
  • 1 cup rice (white or brown, depending on preference)
  • 2 cups chicken or vegetable broth
  • 4 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 cup parmesan cheese (grated)
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Add the shrimp to the skillet, seasoning with salt, pepper, and Italian seasoning. Cook for about 3-4 minutes, flipping halfway, until they turn pink and opaque.
  • Remove the shrimp from the skillet and set aside. In the same skillet, add the remaining butter and the rice. Stir for about 1 minute, allowing the rice to absorb some of the flavors.
  • Pour in the broth and bring to a boil. Reduce heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked through.
  • Once the rice is done, stir in the cooked shrimp and parmesan cheese. Mix until well combined. If it’s too thick, feel free to add a splash of broth or water.
  • Garnish with fresh parsley before serving. Enjoy your delicious meal!
