- 1 pound shrimp (peeled and deveined)
- 1 cup rice (white or brown, depending on preference)
- 2 cups chicken or vegetable broth
- 4 tablespoons butter
- 4 cloves garlic (minced)
- 1 cup parmesan cheese (grated)
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet, seasoning with salt, pepper, and Italian seasoning. Cook for about 3-4 minutes, flipping halfway, until they turn pink and opaque.
- Remove the shrimp from the skillet and set aside. In the same skillet, add the remaining butter and the rice. Stir for about 1 minute, allowing the rice to absorb some of the flavors.
- Pour in the broth and bring to a boil. Reduce heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked through.
- Once the rice is done, stir in the cooked shrimp and parmesan cheese. Mix until well combined. If it’s too thick, feel free to add a splash of broth or water.
- Garnish with fresh parsley before serving. Enjoy your delicious meal!
