  • 1 pound boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 package (16 oz) gnocchi
  • 1 cup fresh spinach, roughly chopped
  • optional Grated Parmesan cheese for serving

Instructions

  • Place the chicken breasts at the bottom of your Crock Pot.
  • Add the diced carrots, celery, and onion on top of the chicken.
  • Pour in the chicken broth, and sprinkle garlic powder, Italian seasoning, salt, and pepper.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  • Once done, shred the chicken using two forks and return it to the pot.
  • Stir in the heavy cream and gnocchi, cooking on high for an additional 30 minutes.
  • Add the fresh spinach just before serving.
