Ingredients

  • 4 cups of chicken broth

  • 2 cups of kale, chopped
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional, for heat)

Instructions

  1. Heat a large pot over medium heat and cook the Italian sausage until browned, breaking it up as it cooks.
  2. Add the chopped onion and minced garlic, sautéing for 3-4 minutes.
  3. Pour in the chicken broth and add the diced potatoes; bring to a boil and then let simmer.
  4. Once potatoes are tender, stir in the heavy cream and chopped kale, cooking for an additional 5 minutes.
  5. Taste and season with salt, pepper, and crushed red pepper flakes before serving hot.
