- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp nutmeg (optional)
- ½ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
- In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the eggs and vanilla extract to the mixture, whisking until smooth.
- Stir in the grated zucchini. It might seem like a lot, but it will add great moisture!
- In a separate bowl, mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
- If using, fold in the nuts or chocolate chips at this point.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
