  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg (optional)
  • ½ cup chopped nuts or chocolate chips (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  • In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined.
  • Add the eggs and vanilla extract to the mixture, whisking until smooth.
  • Stir in the grated zucchini. It might seem like a lot, but it will add great moisture!
  • In a separate bowl, mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  • If using, fold in the nuts or chocolate chips at this point.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Once baked, allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
