- 2 medium zucchinis, grated

- 1 cup of breadcrumbs

- 2 large eggs
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried oregano
- 1/2 teaspoon of red pepper flakes (optional)
- Olive oil for brushing
Instructions
- Preheat oven to 400°F (200°C).
- Grate zucchinis and squeeze out excess moisture.
- Mix zucchini, garlic, breadcrumbs, Parmesan, eggs, salt, pepper, oregano, and red pepper flakes in a bowl.
- Form mixture into small balls or patties.
- Place on a parchment-lined baking sheet and brush with olive oil. Bake for about 20 minutes until golden brown.
- Let cool slightly before serving with dipping sauce.

- Make sure to squeeze out as much moisture from the zucchini as possible for best results.
