- 2 medium zucchinis (grated)
- 1 cup breadcrumbs (panko recommended)
- 1/2 cup Parmesan cheese (grated)
- 1 large egg (beaten)
- 3 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- Olive oil (for frying)
Instructions
- Grate the zucchinis into a large bowl and sprinkle with salt. Let sit for 10 minutes.
- Squeeze out excess moisture from the zucchinis using a kitchen towel.
- In a bowl, mix the drained zucchini with breadcrumbs, Parmesan, egg, garlic, parsley, pepper, and paprika.
- Heat olive oil in a skillet over medium heat.
- Form tablespoon-sized patties and fry in the skillet for 3-4 minutes on each side until golden.
- Transfer to a paper towel-lined plate to absorb excess oil.
- Serve warm with your favorite dip!
