- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 0.5 cups unsweetened cocoa powder
- 1 tsp baking soda
- 0.5 tsp salt
- 0.5 cups vegetable oil
- 2 large eggs
- 1 cup grated zucchini
- 1 tsp vanilla extract
- 0.5 cups chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, mix vegetable oil, eggs, grated zucchini, and vanilla until smooth.
- Combine the wet and dry ingredients; mix until just combined. Fold in chocolate chips if using.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- While cooling, prepare the frosting by beating softened butter until creamy. Gradually add powdered sugar and cocoa, alternating with milk until smooth.
- Once brownies are cool, spread frosting evenly on top, cut into squares, and enjoy!
