- 1 cup shredded zucchini (about 1 medium zucchini)
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil or melted coconut oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional but recommended)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large mixing bowl, combine the granulated sugar, brown sugar, and oil. Mix until well blended.
- Add the eggs and vanilla extract, mixing until smooth. Then, fold in the shredded zucchini.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
- If using, fold in the chocolate chips.
- Pour the batter into the prepared baking dish, spreading it evenly. Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
