- 2 medium zucchinis, sliced
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup milk
- 1/2 cup cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Wash and slice the zucchinis.
- In a bowl, mix cooked rice, cheese, milk, cream, garlic powder, onion powder, salt, and pepper.
- In a greased baking dish, layer zucchini slices and the creamy rice mixture, finishing with cheese on top.
- Bake for about 30 minutes until golden brown and bubbly.
Notes
- Thinner zucchini slices will cook faster.
- Feel free to add other vegetables or proteins for variation.
