- 8 ounces spaghetti or preferred pasta
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 lemon zest and juice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- Salt and black pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Start by cooking your pasta according to the package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Next, add the lemon juice and zest to the skillet. Stir to combine and let it cook for another minute.
- Now, toss in the cooked pasta along with the chopped parsley and basil. Mix well to coat the pasta in the lemony sauce.
- If the pasta seems dry, add a bit of the reserved pasta water until you reach the desired consistency.
- Season with salt and pepper to taste. Serve immediately, topped with freshly grated Parmesan cheese if you like.
