  • 1 medium cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 medium red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup feta cheese (crumbled)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper (to taste)

Instructions

  • Prepare your vegetables: chop the cucumber, halve the cherry tomatoes, and finely chop the red onion.
  • In a large mixing bowl, combine the drained white beans, cucumber, cherry tomatoes, red onion, and parsley.
