- 4 cups watermelon (cubed)
- 1 cup cucumber (diced (optional))
- 1/2 cup feta cheese (crumbled (optional))
- 1/4 cup fresh mint leaves (chopped)
- 2 tablespoons balsamic glaze (or olive oil and lemon juice)
- Salt and pepper (to taste)
Instructions
- Start by washing your watermelon and cucumbers thoroughly. Cut the watermelon into cubes and the cucumbers into small dice.
- In a large mixing bowl, combine the watermelon and cucumber.
- Add the chopped mint leaves and crumbled feta cheese if you’re using it.
- Drizzle the balsamic glaze over the salad and sprinkle with salt and pepper to taste.
- Toss gently to combine all the ingredients. Be careful not to mash the watermelon!
- Serve immediately, or chill in the fridge for about 30 minutes to let the flavors meld.
