Instructions
- Start by cubing the watermelon into bite-sized pieces.
- Dice the cucumber into similar-sized pieces.
- In a large bowl, combine the watermelon, cucumber, and crumbled feta cheese.
- Add the chopped mint leaves.
- In a small bowl, whisk together the olive oil and balsamic vinegar.
- Drizzle the dressing over the salad and gently toss.
