- 4 cups seedless watermelon (cubed)
- 1 cup coconut milk (canned or carton)
- 2 tablespoons honey or maple syrup (optional, depending on sweetness preference)
- 1 tablespoon lime juice
- a pinch salt
Instructions
- Blend the watermelon in a blender until smooth.
- Strain the watermelon juice through a fine mesh sieve into a mixing bowl.
- Add coconut milk, honey or maple syrup, lime juice, and a pinch of salt. Stir until combined.
- Pour the mixture into popsicle molds, filling them about 3/4 full.
- Insert sticks and freeze for 4-6 hours until solid.
- Run molds under warm water to remove popsicles and enjoy!
