- 4 cups cubed seedless watermelon
- 2 cups fresh blueberries
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh mint leaves
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash the blueberries and mint leaves, then set them aside to dry.
- Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
- Add the blueberries on top of the watermelon.
- Sprinkle the crumbled feta cheese over the fruit.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Add the chopped mint leaves and toss lightly again.
- Serve immediately or chill for about 30 minutes.
