  • 1 medium head green cabbage (chopped)
  • 2 medium carrots (diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 can (14 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
  • 4 cups vegetable broth (or water)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt (to taste)
  • 1 teaspoon pepper (to taste)
  • 1 tablespoon olive oil (optional)
  • 1 cup green beans (trimmed and chopped (optional))
  • 1 cup potatoes (diced (optional))

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and diced carrots, cooking for another 2 minutes until fragrant.
  • Stir in the chopped cabbage, diced tomatoes, vegetable broth, thyme, paprika, salt, and pepper. Bring to a boil.
  • Reduce heat and let it simmer for about 30 minutes. The cabbage should be tender.
  • If you're adding green beans or potatoes, toss them in during the last 15 minutes of cooking.
