- 1 medium head green cabbage (chopped)
- 2 medium carrots (diced)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 1 can (14 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
- 4 cups vegetable broth (or water)
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon salt (to taste)
- 1 teaspoon pepper (to taste)
- 1 tablespoon olive oil (optional)
- 1 cup green beans (trimmed and chopped (optional))
- 1 cup potatoes (diced (optional))
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrots, cooking for another 2 minutes until fragrant.
- Stir in the chopped cabbage, diced tomatoes, vegetable broth, thyme, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about 30 minutes. The cabbage should be tender.
- If you're adding green beans or potatoes, toss them in during the last 15 minutes of cooking.
