- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup mascarpone cheese
- 2 ripe pears, peeled, cored, and diced
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This should take about 3-4 minutes.
- Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract and mascarpone cheese until smooth.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the diced pears gently.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Once cool, dust the top with powdered sugar if desired, and serve!
