  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup mascarpone cheese
  • 2 ripe pears, peeled, cored, and diced
  • Powdered sugar for dusting (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This should take about 3-4 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract and mascarpone cheese until smooth.
  • Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fold in the diced pears gently.
  • Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • Once cool, dust the top with powdered sugar if desired, and serve!
