  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 vanilla bean split and scraped
  • 2 1/2 teaspoons powdered gelatin
  • 3 tablespoons water
  • 1 cup mixed berries
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice

Instructions

  • Start by blooming the gelatin. In a small bowl, sprinkle the gelatin over the 3 tablespoons of water and let it sit for about 5 minutes.
  • In a saucepan, combine the heavy cream, whole milk, and granulated sugar over medium heat. Stir until the sugar dissolves and the mixture begins to steam, but do not let it boil.
  • Add the scraped vanilla bean seeds and the pod, as well as the vanilla extract. Stir to combine.
  • Remove the saucepan from the heat. Add the bloomed gelatin to the cream mixture and stir until completely dissolved.
  • Pour the mixture into individual serving cups or ramekins. Let them cool to room temperature before covering and refrigerating for at least 4 hours, or until set.
  • While the panna cotta is setting, prepare the berry sauce. In a small saucepan, combine the mixed berries, sugar, and lemon juice. Cook over medium heat until the berries soften and the sauce thickens slightly, about 5-7 minutes.
  • Once the panna cotta is set, remove it from the refrigerator. Serve topped with the berry sauce. Enjoy!
