- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 1 vanilla bean split and scraped
- 2 1/2 teaspoons powdered gelatin
- 3 tablespoons water
- 1 cup mixed berries
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions
- Start by blooming the gelatin. In a small bowl, sprinkle the gelatin over the 3 tablespoons of water and let it sit for about 5 minutes.
- In a saucepan, combine the heavy cream, whole milk, and granulated sugar over medium heat. Stir until the sugar dissolves and the mixture begins to steam, but do not let it boil.
- Add the scraped vanilla bean seeds and the pod, as well as the vanilla extract. Stir to combine.
- Remove the saucepan from the heat. Add the bloomed gelatin to the cream mixture and stir until completely dissolved.
- Pour the mixture into individual serving cups or ramekins. Let them cool to room temperature before covering and refrigerating for at least 4 hours, or until set.
- While the panna cotta is setting, prepare the berry sauce. In a small saucepan, combine the mixed berries, sugar, and lemon juice. Cook over medium heat until the berries soften and the sauce thickens slightly, about 5-7 minutes.
- Once the panna cotta is set, remove it from the refrigerator. Serve topped with the berry sauce. Enjoy!
