These Vanilla Bean Crème Brûlée Donuts are a delightful treat that combines the fluffy texture of a donut with the rich, creamy flavor of vanilla bean and a crispy caramelized sugar topping.

  • Total Time: 32

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 vanilla bean (split and scraped)
  • 1 cup heavy cream
  • 1/4 cup powdered sugar (for filling)
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon water (for caramelizing)

Instructions

  • Preheat your oven to 350°F (175°C). In a large bowl, mix together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, melted butter, eggs, vanilla extract, and the seeds scraped from the vanilla bean.
  • Add the wet ingredients to the dry ingredients, mixing until just combined. Don’t overmix – a few lumps are okay!
  • Grease your donut pan and fill each cavity about 2/3 full with the batter. Bake for about 10-12 minutes or until a toothpick comes out clean.
  • Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack.
  • While the donuts are cooling, beat together the heavy cream and powdered sugar until soft peaks form. This will be your filling.
  • Once the donuts are cool, use a piping bag to fill them with the vanilla cream mixture.
  • Sprinkle granulated sugar on top of each filled donut. Using a kitchen torch or broiler, caramelize the sugar until it’s golden and crispy.
