- 1 can whole corn (drained)
- 1 can black beans (rinsed and drained)
- 1 cup sour cream
- 1 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/2 cup diced red bell pepper
- 1/2 cup diced green onions ((scallions))
- 1 packet taco seasoning mix
- to taste jalapeños (optional)
- for garnish fresh cilantro (optional)
Instructions
- In a large mixing bowl, combine the drained corn and black beans.
- Add in the sour cream and mayonnaise. Stir until well mixed.
- Fold in the shredded cheddar cheese, diced red bell pepper, and green onions.
- Sprinkle in the taco seasoning mix and mix again until all ingredients are coated evenly.
- If using, add diced jalapeños to taste.
- Cover and chill in the fridge for at least 30 minutes.
- Before serving, stir well and garnish with fresh cilantro if desired.
