  • 2 cups vegetable broth
  • 1 15 oz can white beans (cannellini or great northern), drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 stalk celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • to taste Salt and pepper
  • 2 cups fresh spinach or kale (optional for added greens)
  • 1 lemon Juice of (for brightness)
  • to taste Fresh parsley or basil for garnish

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until the veggies soften.
  • Add the minced garlic, thyme, oregano, and red pepper flakes. Stir for about 1 minute until fragrant.
  • Pour in the vegetable broth and add the white beans. Bring to a gentle simmer.
  • Cook for about 15 minutes, allowing the flavors to meld. If you’re adding greens, toss them in during the last 2 minutes of cooking.
  • Season with salt, pepper, and lemon juice before serving. Garnish with fresh parsley or basil.
