- 2 cups vegetable broth
- 1 15 oz can white beans (cannellini or great northern), drained and rinsed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1 stalk celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- to taste Salt and pepper
- 2 cups fresh spinach or kale (optional for added greens)
- 1 lemon Juice of (for brightness)
- to taste Fresh parsley or basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until the veggies soften.
- Add the minced garlic, thyme, oregano, and red pepper flakes. Stir for about 1 minute until fragrant.
- Pour in the vegetable broth and add the white beans. Bring to a gentle simmer.
- Cook for about 15 minutes, allowing the flavors to meld. If you’re adding greens, toss them in during the last 2 minutes of cooking.
- Season with salt, pepper, and lemon juice before serving. Garnish with fresh parsley or basil.
