  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 2 cups fresh spinach
  • Olive oil, for sautéing

Instructions

  1. Heat olive oil in a pot and sauté onion, carrots, and celery for 5 minutes.
  2. Add garlic, thyme, and rosemary; cook for 1 minute.
  3. Stir in diced tomatoes, vegetable broth, and chickpeas; season and bring to a boil.
