For this delightful Tuscan Chickpea Soup, you’ll need the following ingredients:
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 2 cups fresh spinach
- Olive oil, for sautéing
Instructions
- Heat olive oil in a pot and sauté onion, carrots, and celery for 5 minutes.
- Add garlic, thyme, and rosemary; cook for 1 minute.
- Stir in diced tomatoes, vegetable broth, and chickpeas; season and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add spinach and cook for 5 minutes; taste and adjust seasoning.

- For added flavor, consider using homemade broth.
