- 2 breasts boneless, skinless chicken
- 1 pound pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- 1/2 cup Parmesan cheese, grated
- to taste Salt and pepper
- for garnish Fresh basil
Instructions
- Cook pasta according to package instructions, adding salt.
- Season chicken with salt and pepper.
- Heat olive oil in a skillet over medium-high heat, cook chicken for 6-7 minutes per side.
- Remove chicken, add garlic and sun-dried tomatoes to the skillet, sauté for 2 minutes.
- Add heavy cream and chicken broth, simmer for a few minutes.
- Mix in spinach until wilted, then return sliced chicken.
- Stir in Parmesan cheese until melted.
- Combine with cooked pasta and serve, garnished with basil.
