  • 2 breasts boneless, skinless chicken
  • 1 pound pasta (penne or fettuccine)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • to taste Salt and pepper
  • for garnish Fresh basil

Instructions

  • Cook pasta according to package instructions, adding salt.
  • Season chicken with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat, cook chicken for 6-7 minutes per side.
  • Remove chicken, add garlic and sun-dried tomatoes to the skillet, sauté for 2 minutes.
  • Add heavy cream and chicken broth, simmer for a few minutes.
  • Mix in spinach until wilted, then return sliced chicken.
  • Stir in Parmesan cheese until melted.
  • Combine with cooked pasta and serve, garnished with basil.
