  • 1 pound ground turkey sausage
  • 6 large eggs
  • 1 cup shredded cheese ((cheddar or your favorite))
  • 1 cup chopped vegetables ((bell peppers, spinach, or onions))
  • Salt and pepper (to taste)
  • Cooking spray (or muffin liners)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with muffin liners.
  • In a skillet over medium heat, cook the ground turkey sausage until browned and cooked through, about 7-10 minutes. Drain excess fat.
  • In a bowl, whisk together the eggs, salt, and pepper. Add in the cooked sausage, cheese, and vegetables, stirring until well combined.
  • Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 20-25 minutes or until the egg is set and the tops are lightly golden. You can check doneness by inserting a toothpick into the center of a muffin cup; it should come out clean.
  • Let them cool for a few minutes before removing from the tin. Enjoy warm or let them cool completely for storage.
