- 2 large flour tortillas
- 1 cup shredded turkey ham
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup bell peppers, diced
- 1/4 cup green onions, chopped
- 2 large eggs
- 2 tablespoons milk
- Salt and pepper, to taste
- Butter or oil for cooking
Instructions
- Start by whisking the eggs and milk in a bowl. Add a pinch of salt and pepper for flavor.
- Heat a skillet over medium heat and add a little butter or oil.
- Pour the egg mixture into the skillet, stirring gently until scrambled and cooked through. Remove from heat.
- In the same skillet, place one tortilla and layer half of the cheese, turkey ham, bell peppers, green onions, and scrambled eggs on one half.
- Sprinkle the remaining cheese on top, then fold the other half of the tortilla over the filling.
- Cook for about 2-3 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet and slice into wedges. Serve hot!
