A quick and easy breakfast quesadilla filled with turkey ham, cheese, and veggies.

  • 2 large flour tortillas
  • 1 cup shredded turkey ham
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup bell peppers, diced
  • 1/4 cup green onions, chopped
  • 2 large eggs
  • 2 tablespoons milk
  • Salt and pepper, to taste
  • Butter or oil for cooking

Instructions

  • Start by whisking the eggs and milk in a bowl. Add a pinch of salt and pepper for flavor.
  • Heat a skillet over medium heat and add a little butter or oil.
  • Pour the egg mixture into the skillet, stirring gently until scrambled and cooked through. Remove from heat.
  • In the same skillet, place one tortilla and layer half of the cheese, turkey ham, bell peppers, green onions, and scrambled eggs on one half.
  • Sprinkle the remaining cheese on top, then fold the other half of the tortilla over the filling.
  • Cook for about 2-3 minutes on each side until golden brown and the cheese is melted.
  • Remove from the skillet and slice into wedges. Serve hot!
