  • 6 slices turkey bacon
  • 6 large eggs
  • 1 cup shredded cheese
  • 1/2 cup bell peppers, diced
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Cooking spray or olive oil to grease the muffin tin

Instructions

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a muffin tin with cooking spray or olive oil.
  • Cook the turkey bacon in a skillet over medium heat until crispy. Once cooked, chop it into small pieces.
  • In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.
  • Add in the diced bell peppers, green onions, cooked turkey bacon, and half of the cheese to the egg mixture. Stir everything together.
  • Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
  • Top each cup with the remaining cheese.
  • Bake in the preheated oven for about 20-25 minutes or until the eggs are set and lightly golden on top.
  • Remove from the oven and allow to cool for a few minutes before carefully removing the breakfast cups from the tin.
  • Serve warm and enjoy!
