- 6 slices turkey bacon
- 6 large eggs
- 1 cup shredded cheese
- 1/2 cup bell peppers, diced
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Cooking spray or olive oil to grease the muffin tin
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a muffin tin with cooking spray or olive oil.
- Cook the turkey bacon in a skillet over medium heat until crispy. Once cooked, chop it into small pieces.
- In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.
- Add in the diced bell peppers, green onions, cooked turkey bacon, and half of the cheese to the egg mixture. Stir everything together.
- Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
- Top each cup with the remaining cheese.
- Bake in the preheated oven for about 20-25 minutes or until the eggs are set and lightly golden on top.
- Remove from the oven and allow to cool for a few minutes before carefully removing the breakfast cups from the tin.
- Serve warm and enjoy!
