  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh herbs (like basil or parsley)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a muffin tin or line with paper liners.
  3. In a bowl, mix flour, cornmeal, baking powder, baking soda, salt, and black pepper.
  4. In another bowl, whisk eggs, olive oil, and zucchini.
  5. Combine wet and dry ingredients, stirring gently.
  6. Fold in feta cheese and herbs.
  7. Fill muffin cups 2/3 full with batter.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool in the tin for a few minutes, then transfer to a wire rack.
