Instructions
- Preheat the oven to 375°F (190°C).
- Grease a muffin tin or line with paper liners.
- In a bowl, mix flour, cornmeal, baking powder, baking soda, salt, and black pepper.
- In another bowl, whisk eggs, olive oil, and zucchini.
- Combine wet and dry ingredients, stirring gently.
- Fold in feta cheese and herbs.
- Fill muffin cups 2/3 full with batter.
- Bake for 20-25 minutes until golden brown.
- Cool in the tin for a few minutes, then transfer to a wire rack.
