- 8 oz spaghetti
- 1/3 cup extra virgin olive oil
- 6 cloves garlic, thinly sliced
- 1/4 teaspoon red pepper flakes
- Salt to taste
- Freshly ground black pepper to taste
- 1/4 cup fresh parsley, chopped
- Grated Parmesan cheese, for serving
Instructions
- Start by cooking the pasta according to the package instructions. Make sure to add plenty of salt to the boiling water.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and cook until it’s golden brown, about 2-3 minutes.
- Once the garlic is toasted, add the red pepper flakes. Stir for about 30 seconds to let the flavors meld.
- When the pasta is ready, reserve about a cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the garlic oil. Toss everything together, adding reserved pasta water a little at a time.
- Season with salt and pepper to taste. Stir in the chopped parsley before serving.
- Serve hot, topped with freshly grated Parmesan cheese.
