  • 8 oz spaghetti
  • 1/3 cup extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1/4 teaspoon red pepper flakes
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese, for serving

Instructions

  • Start by cooking the pasta according to the package instructions. Make sure to add plenty of salt to the boiling water.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and cook until it’s golden brown, about 2-3 minutes.
  • Once the garlic is toasted, add the red pepper flakes. Stir for about 30 seconds to let the flavors meld.
  • When the pasta is ready, reserve about a cup of the pasta water, then drain the pasta.
  • Add the drained pasta to the skillet with the garlic oil. Toss everything together, adding reserved pasta water a little at a time.
  • Season with salt and pepper to taste. Stir in the chopped parsley before serving.
  • Serve hot, topped with freshly grated Parmesan cheese.
