Instructions

- Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
- Cream softened butter and sugar until fluffy.
- Add egg and vanilla extract; mix well.
- Incorporate cooled espresso and mascarpone until smooth.
- Gradually add dry ingredients to the wet mixture; stir until just combined.
- Scoop rounded tablespoons of dough onto a lined baking sheet.
- Bake for 12-15 minutes until edges are set; cool for 5 minutes before transferring to a wire rack.
- Dust cooled cookies with powdered sugar.
