  • 4 fillets tilapia
  • 2 large red bell peppers
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Roast the red bell peppers on a baking sheet for about 20-25 minutes until the skins are charred and blistered. Remove from the oven and let them cool.
  • Once cooled, peel off the skins, remove the seeds, and slice the peppers.
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Stir in the roasted peppers, oregano, paprika, salt, and pepper. Allow the mixture to simmer for 5 minutes.
  • In a separate pan, sear the tilapia fillets for about 3 minutes on each side until golden brown.
  • Transfer the tilapia to a baking dish, and pour the roasted pepper sauce over the fish.
  • Bake in the oven for 10-12 minutes until the fish flakes easily with a fork.
  • Garnish with fresh basil if desired and serve hot.
