- 4 fillets tilapia
- 2 large red bell peppers
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Roast the red bell peppers on a baking sheet for about 20-25 minutes until the skins are charred and blistered. Remove from the oven and let them cool.
- Once cooled, peel off the skins, remove the seeds, and slice the peppers.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the roasted peppers, oregano, paprika, salt, and pepper. Allow the mixture to simmer for 5 minutes.
- In a separate pan, sear the tilapia fillets for about 3 minutes on each side until golden brown.
- Transfer the tilapia to a baking dish, and pour the roasted pepper sauce over the fish.
- Bake in the oven for 10-12 minutes until the fish flakes easily with a fork.
- Garnish with fresh basil if desired and serve hot.
