  • 1 lb boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 1 cup pineapple chunks (fresh or canned)
  • 2 cups cooked white or brown rice
  • 1/2 cup teriyaki sauce (store-bought or homemade)
  • 1 tablespoon vegetable oil
  • 1/4 cup green onions (sliced)
  • 1 tablespoon sesame seeds (optional)
  • Salt and pepper (to taste)

Instructions

  • In a large skillet, heat the vegetable oil over medium-high heat.
  • Add the chicken pieces, seasoning with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  • Pour in the teriyaki sauce and add the pineapple chunks. Stir to coat the chicken and pineapple evenly.
  • Let it simmer for another 3-5 minutes, allowing the sauce to thicken slightly.
