- 1 lb boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
- 1 cup pineapple chunks (fresh or canned)
- 2 cups cooked white or brown rice
- 1/2 cup teriyaki sauce (store-bought or homemade)
- 1 tablespoon vegetable oil
- 1/4 cup green onions (sliced)
- 1 tablespoon sesame seeds (optional)
- Salt and pepper (to taste)
Instructions
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the chicken pieces, seasoning with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.
- Pour in the teriyaki sauce and add the pineapple chunks. Stir to coat the chicken and pineapple evenly.
- Let it simmer for another 3-5 minutes, allowing the sauce to thicken slightly.
- While the chicken is cooking, prepare your rice according to package instructions.
- To serve, place a generous scoop of rice in a bowl, top with the teriyaki chicken and pineapple mixture, and garnish with sliced green onions and sesame seeds, if desired.
