  • 2 cups cooked rice (white or brown)
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup teriyaki sauce
  • 1 cup broccoli florets
  • 1 cup bell peppers, diced
  • 1 cup shredded carrots
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tablespoons sesame seeds (optional)
  • Salt and pepper, to taste
  • Green onions, chopped for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and season the chicken with salt and pepper. Cook in a skillet until golden brown, about 5-7 minutes.
  2. In a bowl, mix cooked rice, teriyaki sauce, broccoli, bell peppers, and carrots until well coated.
  3. Add the cooked chicken to the rice mixture and stir well. Transfer to a greased 9×13 inch baking dish.
  4. Sprinkle cheese on top and bake for 25-30 minutes until cheese is bubbly and golden.
  5. Let cool for a few minutes, garnish with green onions, and serve hot.
