  • 2 medium zucchini (sliced)
  • 2 medium yellow squashes (sliced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)

  • 1 teaspoon Italian seasoning (optional)
  • to taste fresh lemon juice

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the asparagus, zucchini, and squash.
  • Add olive oil, garlic, salt, and pepper. Toss well until all veggies are coated.
  • Spread the mixture evenly on a baking sheet.
  • Roast in the oven for about 15-20 minutes or until the veggies are tender and slightly caramelized.
  • Remove from the oven, drizzle with fresh lemon juice, and sprinkle with Italian seasoning if desired. Serve warm.
