- 1 pound fresh asparagus (trimmed)
- 2 medium zucchini (sliced)
- 2 medium yellow squashes (sliced)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- to taste salt
- to taste pepper
- 1 teaspoon Italian seasoning (optional)
- to taste fresh lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the asparagus, zucchini, and squash.
- Add olive oil, garlic, salt, and pepper. Toss well until all veggies are coated.
- Spread the mixture evenly on a baking sheet.
- Roast in the oven for about 15-20 minutes or until the veggies are tender and slightly caramelized.
- Remove from the oven, drizzle with fresh lemon juice, and sprinkle with Italian seasoning if desired. Serve warm.
