  • 1 medium red onion (thinly sliced)
  • 1 cup rice vinegar
  • 1/2 cup sugar (or honey for a healthier option)
  • 1/2 cup water
  • 1 teaspoon salt
  • 1 teaspoon chili flakes (adjust based on your spice preference)
  • 1 tablespoon sesame seeds (optional for garnish)

Instructions

  • Start by slicing the red onion thinly. The thinner the slices, the quicker they’ll pickle!
  • In a medium saucepan, combine the rice vinegar, sugar, water, salt, and chili flakes. Bring this mixture to a boil over medium heat, stirring occasionally until the sugar dissolves.
  • Once the mixture is boiling, remove it from heat. Add the sliced onions to the saucepan and stir to combine.
  • Transfer the onions and pickling liquid into a jar or airtight container. Let them cool to room temperature before sealing.
  • Refrigerate for at least 30 minutes, although a few hours will give you even better flavor.
  • Serve on tacos, sandwiches, salads, or however you like!
