  • 4 medium sweet potatoes
  • 1 lb ground turkey or beef
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1 cup salsa
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes, then bake for about 30 minutes until tender.
  3. In a skillet, cook the ground turkey or beef over medium heat until browned, draining excess fat.
  4. Stir in the taco seasoning and a splash of water; mix well.
  5. Add black beans and corn, cooking for an additional 5 minutes.
  6. Cut the baked sweet potatoes in half, fluffing the insides, then fill with the meat mixture. Top with cheese, avocado, and salsa.
  7. Return stuffed potatoes to the oven for 5 minutes to melt the cheese, garnish with cilantro, and serve.
