- 4 medium sweet potatoes
- 1 lb ground turkey or beef
- 1 can black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado, diced
- 1 cup salsa
- Fresh cilantro for garnish
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes, then bake for about 30 minutes until tender.
- In a skillet, cook the ground turkey or beef over medium heat until browned, draining excess fat.
- Stir in the taco seasoning and a splash of water; mix well.
- Add black beans and corn, cooking for an additional 5 minutes.
- Cut the baked sweet potatoes in half, fluffing the insides, then fill with the meat mixture. Top with cheese, avocado, and salsa.
- Return stuffed potatoes to the oven for 5 minutes to melt the cheese, garnish with cilantro, and serve.
