A delicious twist on the classic baked potato loaded with taco flavors.

  • 4 medium russet potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 1/2 cup chopped green onions
  • 1/2 cup diced tomatoes
  • 1/2 cup black olives (optional)
  • 1 whole avocado (diced, optional)
  • Salt and pepper (to taste)

Instructions

  • Preheat your oven to 425°F (220°C). Scrub the potatoes under cold water and pat them dry.
  • Pierce each potato several times with a fork. This allows steam to escape while baking.
  • Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender.
  • While the potatoes are baking, brown the ground beef or turkey in a skillet over medium heat. Drain excess fat.
  • Add the taco seasoning to the meat along with a splash of water (about 1/4 cup) and stir to combine. Let simmer for 5 minutes.
  • Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  • Slice each potato down the middle and gently push the ends together to fluff the insides.
  • Load each potato with the seasoned meat, shredded cheese, and your choice of toppings like sour cream, salsa, green onions, tomatoes, olives, and avocado.
