- 4 medium russet potatoes
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup salsa
- 1/2 cup chopped green onions
- 1/2 cup diced tomatoes
- 1/2 cup black olives (optional)
- 1 whole avocado (diced, optional)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 425°F (220°C). Scrub the potatoes under cold water and pat them dry.
- Pierce each potato several times with a fork. This allows steam to escape while baking.
- Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender.
- While the potatoes are baking, brown the ground beef or turkey in a skillet over medium heat. Drain excess fat.
- Add the taco seasoning to the meat along with a splash of water (about 1/4 cup) and stir to combine. Let simmer for 5 minutes.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Slice each potato down the middle and gently push the ends together to fluff the insides.
- Load each potato with the seasoned meat, shredded cheese, and your choice of toppings like sour cream, salsa, green onions, tomatoes, olives, and avocado.
