- 12 fresh jalapeños
- 8 oz brie cheese (rind removed)
- 1/2 cup fresh blueberries
- 1/4 cup cream cheese (softened)
- 1/4 cup brown sugar
- 1 tbsp fresh thyme (chopped)
- 1/2 cup breadcrumbs (for topping)
- to taste olive oil (for drizzling)
- to taste salt and pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the jalapeños in half lengthwise and remove the seeds and membranes. Use gloves if you have sensitive skin!
- In a mixing bowl, combine the brie cheese, cream cheese, blueberries, brown sugar, thyme, salt, and pepper. Mix until well combined.
- Fill each jalapeño half with the cheese mixture, heaping it slightly for a nice presentation.
- Sprinkle breadcrumbs on top of the filled jalapeños for a crunchy finish.
- Drizzle a little olive oil over the poppers to help them crisp up in the oven.
- Place the poppers on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden and bubbly.
- Let them cool for a few minutes before serving. Enjoy!
