  • 4 pieces boneless, skinless chicken breasts
  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon red pepper flakes ((adjust to taste))
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil
  • Chopped green onions (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, mix together the apricot preserves, soy sauce, Dijon mustard, and red pepper flakes. Set aside.
  • Season the chicken breasts with salt and pepper on both sides.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken and sear for about 3-4 minutes on each side until golden brown.
  • Pour the apricot mixture over the chicken. Make sure each piece is well coated.
  • Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Once done, remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped green onions.
