- 4 pieces boneless, skinless chicken breasts
- 1 cup apricot preserves
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon red pepper flakes ((adjust to taste))
- Salt and pepper (to taste)
- 1 tablespoon olive oil
- Chopped green onions (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the apricot preserves, soy sauce, Dijon mustard, and red pepper flakes. Set aside.
- Season the chicken breasts with salt and pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken and sear for about 3-4 minutes on each side until golden brown.
- Pour the apricot mixture over the chicken. Make sure each piece is well coated.
- Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Once done, remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped green onions.
