- 2 medium sweet potatoes (peeled and thinly sliced)
- 2 large carrots (grated)
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce (store-bought or homemade)
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C). This step is crucial for even cooking.
- In a large skillet, heat the olive oil over medium heat. Add the grated carrots and cook for about 5 minutes until they soften.
- In a bowl, combine the ricotta cheese, oregano, salt, and pepper. Mix well until you have a smooth consistency.
- Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
- Layer half of the sweet potato slices over the sauce, followed by half of the carrot mixture, and then half of the ricotta mixture. Sprinkle a quarter of the mozzarella on top.
- Repeat the layers, finishing with a layer of remaining sweet potatoes and marinara sauce. Top with the rest of the mozzarella and Parmesan cheese.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. This helps it set and makes serving easier!
