Ingredients

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon chili flakes (adjust to taste)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt to taste

Instructions

  1. Gather all your ingredients.
  2. Dice the fresh pineapple into small pieces.
  3. In a medium saucepan, combine pineapple, red bell pepper, brown sugar, rice vinegar, soy sauce, chili flakes, garlic, and ginger. Cook over medium heat until bubbling.
  4. Reduce heat and simmer for about 10 minutes until the sauce thickens slightly.
  5. Taste and adjust seasoning with salt and chili flakes as desired.
  6. Remove from heat, cool, and store in a jar.
