- 1 lb boneless, skinless chicken thighs
- 1 cup fresh pineapple, diced (canned works too)
- 1/2 cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 cups cooked rice (white or brown, your choice)
- 1/4 cup green onions, chopped
- 1 tablespoon sesame seeds (optional for garnish)
- Salt and pepper (to taste)
Instructions
- Start by heating the olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side, or until they are golden brown and cooked through.
- Once the chicken is cooked, add the diced pineapple to the skillet, stirring it in with the chicken.
- Pour in the sweet chili sauce and soy sauce, mixing everything together. Let it simmer for another 3-5 minutes, allowing the flavors to meld.
- While the chicken and sauce are cooking, prepare your rice according to package instructions.
- To serve, spoon the rice into bowls and top it with the sweet chili pineapple chicken. Sprinkle with chopped green onions and sesame seeds if desired.
