- 2 cups cooked chicken (shredded or diced (rotisserie works great!))
- 1/2 cup sweet chili sauce
- 1 cup lettuce (shredded)
- 1/2 cup carrots (julienned)
- 1/2 cup cucumbers (sliced)
- 1/4 cup red bell pepper (sliced)
- 4 large tortillas or wraps
- to taste fresh cilantro (optional, for garnish)
- to serve lime wedges (for squeezing on top)
Instructions
- Start by shredding or dicing your cooked chicken.
- In a mixing bowl, combine the chicken with the sweet chili sauce.
- Lay your tortilla flat on a clean surface and add a handful of shredded lettuce.
- Add cucumbers, carrots, and red bell peppers on top.
- Spoon the sweet chili chicken mixture into the center.
- Top with fresh cilantro if desired.
- Fold the sides in and roll it up tightly.
- Slice in half and serve with lime wedges.
