- 1 lb boneless, skinless chicken breasts
- 1 cup cooked rice (white or brown)
- 1/2 cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 bell pepper thinly sliced (any color)
- 1 cup broccoli florets
- 1/4 cup green onions, chopped
- sesame seeds for garnish
- optional: chopped cilantro for topping
Instructions
- Start by marinating the chicken. In a bowl, mix together the sweet chili sauce and soy sauce. Add the chicken breasts and let them sit for at least 30 minutes.
- While the chicken is marinating, prepare your rice as per package instructions. I usually opt for brown rice as it's healthier, but white rice is just as good!
- Heat the olive oil in a large skillet over medium heat. Once hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until fully cooked and golden brown.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- In the same skillet, toss in the sliced bell peppers and broccoli. Sauté for about 3-4 minutes until they are tender but still crisp.
- Now, it’s time to assemble your bowls! Start with a base of rice, add the sliced chicken, and top it with sautéed veggies. Drizzle some extra sweet chili sauce on top if you like it extra saucy!
- Finally, add green onions and sesame seeds for garnish. Enjoy your delicious Sweet Chili Chicken Rice Bowls!
