A creamy and hearty meatball soup that combines ground beef and pork with fresh vegetables.

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups beef broth
  • 2 cups diced potatoes
  • 1 cup carrots, sliced
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • Fresh dill for garnish

Instructions

  1. Mix ground beef and pork with breadcrumbs, Parmesan, parsley, egg, garlic powder, onion powder, salt, and pepper. Roll into meatballs.
  2. Brown meatballs in a skillet over medium heat for 5-7 minutes.
  3. In a pot, simmer beef broth and add diced potatoes and sliced carrots. Cook for 10 minutes.
  4. Add meatballs to the pot and cook for another 15-20 minutes.
  5. Stir in heavy cream and Worcestershire sauce, simmer for 5 minutes.
  6. Serve in bowls, garnished with fresh dill.

Notes

  • Make sure not to overcrowd the pan when browning meatballs.
  • For added flavor, consider using homemade beef broth.
