- 12 oz spaghetti
- 1 cup sun-dried tomatoes, chopped ((oil-packed for extra flavor))
- 1 cup feta cheese, crumbled
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 teaspoon red pepper flakes ((optional))
- to taste Salt and pepper
- 1/4 cup fresh basil or parsley for garnish
- 1/4 cup pine nuts, toasted ((optional))
Instructions
- Cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of the pasta water before draining.
- In a large skillet over medium heat, add the olive oil and minced garlic. Sauté for about 1 minute until fragrant but not browned.
- Add the chopped sun-dried tomatoes and red pepper flakes (if using) to the skillet. Cook for another 2-3 minutes to combine the flavors.
- Reduce the heat to low and stir in the cooked spaghetti. Add the reserved pasta water gradually until you reach your desired sauce consistency.
- Fold in the crumbled feta cheese, and season with salt and pepper to taste. Cook for an additional 2 minutes, stirring gently to combine everything.
- Garnish with fresh basil or parsley and toasted pine nuts before serving. Enjoy!
